Searching for information on Cambodia I came along a very good thread someone posted on Thorntree. StChris did a cycling trip through Cambodia.

His summary as follows:

The first leg of the journey was from Phnom Penh to the south and then west into the Cardamom Mountains in Koh Kong province.

The second and more interesting leg was north from Phnom Penh to the pre-Angkorian ruins of Sambor Prei Kuk and then west to Angkor, via the ancient Angkor highway (Route 66), taking in temples and bridges along the way.
You can read the full trip report here: http://www.lonelyplanet.com/thorntree/thread.jspa?threadID=1708540&tstart=0&start=0

I found it useful, hopefully others will to.
