4 day ride out of Chiang Mai suggestions

Morning all I have nearly a week spare while in Chiang Mai over Christmas and am thinking of hiring a bike and doing a 4 day ride out of Chiang Mai. Have ridden this area twice before(Mai Hon song loop and the Golden Triangle) but I am sure there is much more to see. Can anyone suggest a ride for me.

Too many options really.
In planning one needs to think one day out, one day back, then fill in the gaps, roughly where you want to ride.
You will never get bored riding here, & can easily retrace your route in reverse, but stop off in different towns for a different experience.
