Kamphaeng Phet - Phitsanulok - Sukhothai ...

We plan to spend an extra day en route from BKK to the Northern Bike Week in Uttaradit, and we thought of riding around the Phitsanulok/Sukhothai/Tak/Kamphaeng Phet area. Does anyone know some exciting rides in that vicinity (or anywhere else along the route from BKK, for that matter)?
Recommendations are very welcome!
